Thai cuisine is a harmony of flavors that include sweet, salty, sour, spicy and sometimes bitter. It’s also about regionally accessible ingredients. So even though I’m in Nashville now, I consider this an authentic Thai dish that celebrates both my cultures and community. From Thailand to Tennessee, this recipe is so fabulous.  And don’t be afraid of fish sauce. Think of it like anchovy paste in Caesar Dressing.

For others in the AAPI community who may be struggling with mental health, she recommends, “Take care of your body first, and the mind and spirit will follow! Sugar-sweetened drinks like soft drinks, fruit juice, electrolyte sports drinks, energy drinks, and sweetened coffees and teas make up 47% of the added sugar in our diets. But the real kicker is these drinks add calories to our diets without impacting satiety and may actually make you more hungry.
